Ingredients: 1 1/2 cups caster sugar 1 1/2 cups self raising flour 1 tbs vanilla extract 1 tbs baking powder 5 eggs ( seperated) 1/2 cup cooking oil 1/2 cup orange juice zest of 1 lemon Cooking Instructions: 1.in a meduim mixing bowl beat the egg white until thick, add the 3/4 cup of caster sugar little by little keep on beating in meduim speed until stiff . set aside. 2.in the other bowl beat the eggyolks,remaining caster sugar, vanilla extract, cooking oil,and orange juice until thick add the flour and baking powder.after 2 minutes of beat it fold in the egg whites mixture. pour the cake mixture in a 9 inch baking tray. 3. bake it for 45 to 50 minutes in a 190 degree pre heated oven(5 gas marked). Serving Suggestions: nice with a cup of coffe or tea
