Spicy Dilis (Anchovy) PDF Print E-mail

Ingredients:

1  egg 
1/4  cup brown sugar 
1  teaspoon red pepper flakes 
1/2  cup cornstarch 
1/2  lb dilis (anchovies) 
 cooking oil 


Procedure:

Beat eggs until fluffy, the add sugar, salt and pepper.
Blend in cornstarch and beat until smooth.
Pour mixture over anchovies and stir until completely coated.
Deep-fry until crisp and golden brown.
Cool before serving.

Okoy (Shrimp Patty) PDF Print E-mail

Ingredients:

BATTER
1  cup all-purpose flour 
1  cup cornstarch 
1 1/2  teaspoons baking powder 
1 1/2  teaspoons salt 
1/2  teaspoon pepper 
1/4  cup annatto water 
1 1/2  cups shrimp broth 
1  egg, well beaten 
 cooking oil 
TOPPING
2  cups bean sprouts 
1  cup chopped green onions 
2  pieces tofu, cut into strips 
1/2  lb small shrimp, cleaned 
1  cup papayas 


Procedure:

Sift the first five batter ingredients together in a bowl.
Blend in the annatto water, broth and egg.
Beat until smooth.
Heat oil in high heat for deep-frying.
Set aside.
Arrange a bed of bean sprouts and green papaya in a saucer.
Top with some green onion, tofu strips and shrimps.
Add about 1/3 cup of batter.
Slide the mixture carefully into the hot oil.
Fry until crisp and brown on both sides.
Drain.
Serve with a mixture of vinegar and crushed garlic for dipping seasoned with salt and pepper.

Coconut Cream Pudding PDF Print E-mail

Ingredients:

2  tablespoons butter 
3/4  cup sugar 
3  tablespoons sifted flour 
1/4  teaspoon ground cinnamon 
6  egg yolks 
1 1/2  cups coconut cream 
6  egg whites, stiffly beaten 


Procedure:

Preheat oven to 350 degrees F.
Cream the butter and gradually beat in the sugar.
Mix in the flour and cinnamon.
Add 1 egg yolk at a time, beating each addition and until light and fluffy.
Gradually Add the coconut cream.
Fold in egg whites.
Divide among 8 buttered custard cups.
Set in a shallow pan of hot water.
Bake 45 minutes or until set.
Chill and turn out.

Creamy Coffee Gelatin PDF Print E-mail

Ingredients:

1  box unflavored gelatin 
3/4  cup evaporated milk 
1  cup sugar 
3  eggs, separated 
1  teaspoon vanilla 
1/2  cup instant coffee 


Procedure:

Dissolve gelatin in hot coffee.
Beat egg yolk.
Add half of the sugar in dissolved gelatin and milk.
Beat egg whites.
Add the remaining sugar and continue beating until stiff.
Set aside.
Cook egg yolk mixture over low heat.
Cool slightly.
Fold in egg whites mixture.
Pour into molder.
Chill before serving.

Mango Cream Cake PDF Print E-mail

Ingredients:

1/2  cup butter 
1/2-3/4  cup sugar, depending how sweet u want it 
1/2-3/4  cup powdered milk 
1 (170  g) container cream 
2-3  big ripe mangoes, 2 chopped and 1 sliced,for garnish 
24  ladyfingers 
 maraschino cherries, if desired 


Procedure:

Blend the first 5 ingredients (except mango slices) to make mango cream mixture.
Lay ladyfingers on a 9x9 inch dish or pan.
Top with mango cream mixture.
Lay second layers of ladyfingers.
Repeat process.
Garnish with mango slices and cherries.
Refrigerate for 5-6 hours or overnight to set.

6-8 servings

Golden Banana Rolls PDF Print E-mail

Ingredients:

6  pieces bananas 
1  can pineapple tidbits 
1  cup brown sugar 
4  tablespoons margarine 
1  cup water 
12  pieces egg roll wraps 
1/2  cup oil 


Procedure:

Peel and slice bananas into four lengthwise.
Wrap bananas in eggroll wrapper and fry until golden brown.
Set aside.
Boil sugar and water for 20 minutes or until thick.
Add pineapple tidbits.
Simmer until mixture thickens.
Add margarine.
Stir to melt.
Pour on fried bananas.
Serve immediately.
